Chicken, Bacon & Scallion
Sliced chicken and crisp bacon over scallion cream cheese on an Everything bagel.

Start with 1 Everything bagel (about 125 g each).
From bottom to top

- 01Scallion cream cheese40 g
- 35 g Plain cream cheese
- 5 g Scallion, finely sliced
- 02Boneless, skinless chicken breast100 g raw (about 75 g cooked)
- 03Bacon2 thin slices (about 30 g raw)
- TopEverything — top half
For preparation
- 5 ml (1 tsp) Olive oil, for the chicken pan
Before you start
- Mix the cream cheese and scallion. Split one Everything bagel.
- Use a thin chicken cutlet, about 1 cm thick, so it cooks evenly. Keep raw chicken separate from ready-to-eat ingredients and wash utensils after handling it.
Make it
- Cook the bacon in a skillet over medium heat until crisp and fully cooked, following its package instructions. Transfer to a clean plate.
- In a separate skillet, warm the olive oil over medium heat. Cook the chicken for about 4–5 minutes per side, checking that its thickest part reaches 74°C / 165°F with a food thermometer. Time varies with thickness.
- Rest the chicken on a clean board for 3 minutes, then slice across the grain.
- Spread all the scallion cream cheese on the bottom bagel half. Add the sliced chicken, then the bacon. Close with the top half and serve.
At the counter
Assemble just before eating. Keep perishable ingredients refrigerated at 4°C / 40°F or below and follow package storage instructions.
